Instructions:

  1. Put the rice in a fine-mesh strainer and rinse it well.
  2. In a large saucepan, heat the oil over medium heat. Saute the diced onion and minced garlic together for 2-3 minutes, until the onion is translucent.
  3. Add the rice to the saucepan and stir to coat it with the oil and onion mixture. Lightly toast the rice for 2-3 minutes, stirring occasionally.
  4. Put the diced tomatoes and green chilies, chicken broth, salt, and cumin into the saucepan. Combine all ingredients.
  5. After the mixture comes to a boil, reduce the heat to low and cover the saucepan tightly. After 18-20 minutes of simmering, the liquid should have been absorbed and the rice should be tender.
  6. Remove the saucepan from the heat and let it sit, covered, for 5 minutes to allow the rice to steam.
  7. To serve, fluff the rice with a fork and serve immediately.

Tips:

  • If you want a spicier version of this recipe, use diced tomatoes and green chilies with a higher spice level, or add a pinch of cayenne pepper.
